Chocolate-Dulce de Leche Thumbprint Cookies
There’s just something about a miniature cookie that makes my heart sing. Maybe its the fact that you can eat the whole cookie in one bite, or maybe its the fact that I can eat 10 of them and not feel too guilty about it… either way, a thumbprint cookie was necessary to put on the blog, and they’d be absolutely perfect for a dessert board, holiday cookie swap, or for you to make just for fun 🙂 Thats exactly why I developed this Chocolate-Dulce de Leche Thumbprint Cookie recipe, and I’m going to walk you through exactly how to make it!
What are Chocolate Thumbprint Cookies?
We’re really coming up with thoughtful names here people… thumbprint cookies are exactly what they sound like, you make the dough and then put your thumbprint in the centers just before they bake. That way you can fill them with pretty much anything you’d like – in this case dulce de leche.
You really could choose just about any filling out there, but I chose dulce de leche because its EASY, and I loooove easy 🙂 all you need to do is open the can spoon it into the centers!
I will say though, if you have the time – salted caramel would be the perfect addition to these cookies! If you need a good recipe, the filling I used in these Chocolate-Bourbon Cupcakes would be perfect.
Ingredients for Chocolate-Dulce de Leche Thumbprint Cookies
- All-purpose flour
- Cocoa powder
- Salt
- Baking powder
- Butter
- Light brown sugar
- Granulated sugar
- Egg yolks
- Vanilla extract
- Dulce de leche
Tips for Making Chocolate-Dulce de Leche Thumbprint Cookies
- The cookie dough will be thick – don’t worry, these cookies were made to not spread too much, so the dough will be pretty thick when you’re mixing it up.
- Use a cookie dough scoop – these scoops are key when you’re looking for perfectly uniform cookies. It doesn’t matter the size, just as long as they all look the same!
- Use a 1/4 tsp scoop to make “thumbprints.” My thumbprints don’t exactly make the most beautiful indentations, so a 1/4 tsp scoop will work just as well. But if you’re looking for easy, go ahead and use your thumb!

Chocolate-Dulce de Leche Thumbprint Cookies
Ingredients
- 1 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup butter
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 2 large egg yolks at room temperature
- 2 tsp vanilla extract
- 1 (13.4 oz) can dulce de leche
Instructions
- Line 2 baking sheets with parchment paper. Whisk flour, cocoa powder, salt, and baking powder in a large bowl. Set aside
- Beat butter and sugars in the bowl of a stand mixer fitted with the paddle attachment 3 minutes or until light and fluffy.
- Beat in egg yolks and vanilla until well combined, scraping bowl as needed.
- Beat in flour mixture until just combined. Scoop tablespoon-sized balls of dough onto prepared pans. Press your thumb into each cookie dough ball to create a small indent.
- Chill dough 30 minutes. Preheat oven to 350°F. Bake 9 minutes or until cooked through; cool completely. Fill each cookie with 1 Tbsp dulce de leche.
