Chocolate-Dulce de Leche Thumbprint Cookies

- 1 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup butter
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 2 large egg yolks at room temperature
- 2 tsp vanilla extract
- 1 (13.4 oz) can dulce de leche
Line 2 baking sheets with parchment paper. Whisk flour, cocoa powder, salt, and baking powder in a large bowl. Set aside
Beat butter and sugars in the bowl of a stand mixer fitted with the paddle attachment 3 minutes or until light and fluffy.
Beat in egg yolks and vanilla until well combined, scraping bowl as needed.
Beat in flour mixture until just combined. Scoop tablespoon-sized balls of dough onto prepared pans. Press your thumb into each cookie dough ball to create a small indent.
Chill dough 30 minutes. Preheat oven to 350°F. Bake 9 minutes or until cooked through; cool completely. Fill each cookie with 1 Tbsp dulce de leche.
