Funfetti Ice Cream Sandwiches
It’s officially getting up to the 80s here in Alabama, which means its time to start rolling out the ice cream sandwich recipes. I’ve always been a fan of ice cream sandwiches, and I’m talking the classic ones that you probably remember having at your 5th grade ice cream socials or at your best friend’s pool party. Either way, they’re the first thing I run to when it starts to warm up around here, which is usually around April or May.
I definitely plan on adding a classic ice cream sandwich recipe to the blog, so be on the look out for that soon. But, y’all know I love a good cookie. And I especially love a good funfetti cookie. So I had a thought.. sugar cookies + ice cream are basically a match made in heaven, so let’s make an ice cream sandwich out of that!
What are Funfetti Ice Cream Sandwiches?
Cookies are some of my favorite things to bake, and they’re also, conveniently, some of my favorite things to eat. And this funfetti sugar cookie recipe is no exception. Soft, chewy sugar cookies doused in loads of funfetti sprinkles make for a cookie that practically smiles on its own. Sooo, why not fill it with some delicious creamy ice cream?
You’ll need 1 batch of Funfetti Sugar Cookies for this recipe, and you’ll be filling it with your favorite ice cream. You can use chocolate, vanilla, strawberry, really whatever your heart desires!

Equipment you may need…
- Stand mixer: this is the one I have and I love it! I’ve had it for years now and I’ve never had any trouble with it. You definitely don’t “need” a stand mixer for this recipe, but it sure does make life a lot easier.
- Measuring cups/spoons: I’ve been linking these in all of my posts because I love them SO much! They are beautiful and look just like some other expensive ones on the market (but wayyy cheaper).
- Mixing bowls: I love these glass mixing bowls from Amazon. They’re especially perfect for food photography.
- Parchment Paper Sheets: I do and always will buy my parchment paper in sheets from Amazon. I would never ever go back to the rolls because they’re just soooo much easier to work with. Order some and I promise you’ll agree!
Ingredients to have on hand
- Unsalted butter
- Granulated sugar
- Large egg
- Pure vanilla extract – you’re welcome to substitute the extract with vanilla bean paste, it’s a 1:1 ratio!
- Baking soda
- Baking powder
- Kosher salt – I always use Diamond Crystal kosher salt, but you can use any brand of kosher salt.
- All-purpose flour – All of my recipes are tested using King Arthur flours, so I recommend you use the same!
- Rainbow sprinkles – definitely a necessity here!
Tips for making these Ice Cream Sandwiches
- Use room temperature ingredients for the cookies. If any of your ingredients are too cold your butter will split and you mixture will be curdled! I always set my ingredients (like butter and eggs, things that are safe to sit out) on the counter the night before I bake something that I know I’ll need room temperature ingredients for. This way I have everything ready to go.
- Roll the cookie dough in the sprinkles. You may have to squeeze the sprinkles onto the dough balls in between your hands. You want them to adhere to the surface of the cookie, so this is sometimes the best way to accomplish that. I wouldn’t mix the sprinkles into the dough because the sprinkles may run, and we want to see the colorful sprinkles on the cookies.
- Weigh your cookie dough. Especially when I make ice cream sandwiches, I love to weigh my cookie dough balls. This will guarantee that each cookie will be the exact same size. That way when I sandwich 2 together it will look perfectly even all the way around.
- Cut out your ice cream with cutters. If you want ice cream that is smooth on the sides of each cookie sandwiches, I’d encourage you to line a sheet pan with plastic wrap, transfer your softened ice cream onto the pan, and spread it out in an even layer. Put the whole thing back in the freezer, then when you’re ready to fill your cookies use a round cookie cutter (the same size as your cookies) to cut out perfect ice cream rings.
How to Store
Wrap each of your cookie sandwiches individually in plastic wrap and store them in the freezer for up to 3 months. They keep that long, trust me!!
Make Ahead?
You can make the Funfetti Sugar Cookies about 3 days in advance and store them in an airtight in the freezer. You can also spoon the softened ice cream into a sheet pan and store it in the freezer (as described above). When you’re ready to serve them you can just cut out the ice cream rounds and sandwich them between your cookies.
You can also assemble the entire cookie sandwich about 3 months in advance. You’ll just store them, individually wrapped in plastic wrap, in the freezer until you’re ready to serve them.

Funfetti Ice Cream Sandwiches
Ingredients
- 1 batch Funfetti Sugar Cookies (linked above)
- 2 (48-oz) containers ice cream (flavor of your choice) slightly softened
Instructions
- Prepare 1 batch of Funfetti Sugar Cookies. Allow them to cool completely at room temperature before transferring them to an airtight container and placing them in the freezer for at least 1 hour.
- Meanwhile, line a rimmed baking sheet with plastic wrap. Spoon softened ice cream onto prepared baking sheet, spreading into an even layer. Place the entire baking sheet in the freezer for at least 1 hour.
- Use a round cookie cutter (the same size as the cookies) to cut out ice cream rounds. Sandwich each ice cream round between 2 cookies, and place on a separate sheet pan in the freezer. Continue with all of the cookies.
- Allow the cookie sandwiches to freeze for at least 1 hour.
- If you won't be serving these immediately, wrap each one individually in plastic wrap and store them in the freezer for up to 3 months.
- Spoon any remaining ice cream scraps back into the original container so as to not waste any ice cream.
