Funfetti Ice Cream Sandwiches
Creamy vanilla ice cream sandwiched between two soft, chewy funfetti sugar cookies. These Funfetti Ice Cream Sandwiches will always be a crowd favorite.

- 1 batch Funfetti Sugar Cookies (linked above)
- 2 (48-oz) containers ice cream (flavor of your choice) slightly softened
Prepare 1 batch of Funfetti Sugar Cookies. Allow them to cool completely at room temperature before transferring them to an airtight container and placing them in the freezer for at least 1 hour. Meanwhile, line a rimmed baking sheet with plastic wrap. Spoon softened ice cream onto prepared baking sheet, spreading into an even layer. Place the entire baking sheet in the freezer for at least 1 hour.
Use a round cookie cutter (the same size as the cookies) to cut out ice cream rounds. Sandwich each ice cream round between 2 cookies, and place on a separate sheet pan in the freezer. Continue with all of the cookies.
Allow the cookie sandwiches to freeze for at least 1 hour.
If you won't be serving these immediately, wrap each one individually in plastic wrap and store them in the freezer for up to 3 months.
Spoon any remaining ice cream scraps back into the original container so as to not waste any ice cream.
