Salted Caramel-Chocolate Chip Cookies

- 3/4 cup cold unsalted butter cut into tablespoons
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs at room temperature
- 1 egg yolk at room temperature
- 1 Tbsp pure vanilla extract
- 3 1/4 cups all-purpose flour
- 1 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cornstarch
- 3 cups chocolate chips
- 1 cup caramel bits
Preheat oven to 375°F. Line 2 baking sheets with parchment paper and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream butter, sugar, and brown sugar until smooth. Add eggs, egg yolk, and vanilla and mix well.
In a large bowl combine flour, salt, baking soda, and cornstarch. Whisk to combine. Gradually add flour mixture to the stand mixer and mix until just combined and only a few streaks of flour remain.
Add the chocolate chips and caramel bits, stir briefly. Form dough into balls and place on prepared baking sheets. Bake 12 to 13 minutes or until golden brown.
Allow cookies to cool on baking sheets before transferring to a wire rack. Enjoy!
