If you’ve been looking for the perfect recipe to bring to your friends and family, look no further bc this is your answer. I’ve always been obsessed with the combination of chocolate and peanut butter, but this cookie sandwich was the recipe I didn’t know I needed!
Everyone loves a good chocolate-brownie cookie, which is exactly why I decided to take it a step further and whip up a peanut butter mousse to spread in between 2 cookies. Does it taste like pure Heaven? Yes. Do we care that we’re eating 2 cookies? Nope.
What are Chocolate-Peanut Butter Brownie Cookie Sandwiches?
One of the most popular recipes on the blog are these Chocolate Brownie Cookies that are super crispy on the outside with a chewy, gooey center. So I thought, why not make a cookie sandwich out of these babies?!? Enter this recipe. These cookies are some of the easiest you’ll ever make, and trust me… they’re really hard to mess up. They’re the perfect base for my super creamy and delicious peanut butter mousse.
How to Make Chocolate-Peanut Butter Brownie Cookie Sandwiches
Let’s talk about how to make these beauties before you hop in the kitchen and get to baking!
- Make the Chocolate Brownie Cookies : this will be the cookie recipe we’ll use. The recipe couldn’t be easier to make, but just be sure to cool your cookies before you spread the mousse on them.
- Make the Peanut Butter Mousse : Start by beating together the peanut butter and the cream cheese, then beat in the powdered sugar until smooth. Next we’ll add the vanilla extract and beat it in until smooth. Finally, gently fold in your whipped topping (I used Cool-Whip). Make sure you’re extra careful with this step because we don’t want to deflate the whipped topping.
- Assemble : Spread some peanut butter mousse onto 1 of your Chocolate Brownie Cookies then top with another cookie. Voila! How easy is that?!

Chocolate-Peanut Butter Brownie Cookie Sandwiches
Ingredients
For the Chocolate-Brownie Cookies
- 2 batches Chocolate Brownie Cookies (linked above)
For the Peanut Butter Mousse
- 1 (18-oz) jar creamy peanut butter
- 2 (8-oz) pkg cream cheese at room temperature
- 2 cups powdered sugar
- 1 Tbsp vanilla extract
- 1 (8-oz) carton frozen whipped topping thawed
Instructions
For the Peanut Butter Mousse
- Beat peanut butter and cream cheese in a large bowl until smooth. Slowly beat in powdered sugar until smooth. Beat in vanilla.
- Gently fold in whipped topping until smooth.
To Assemble Cookies
- Spread Peanut Butter Mousse on the smooth side of 1 Chocolate Brownie Cookie. Sandwich with a second Chocolate Brownie Cookie.
- Repeat with remaining cookies and mousse.
