Spiced Apple Butter

Put your apples to good use with this smooth, delicious spiced apple butter that's the perfect way to kick off fall.

Ingredients

  • 6 Honeycrisp apples cored, unpeeled, and chopped
  • 3 1/2 cups apple cider
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 cinnamon stick
  • 3 whole cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tbsp apple cider vinegar

Instructions

  • Bring apples, cider, sugars, cinnamon, cloves, nutmeg, and salt to a boil in a large wide pot.
  • Cook over medium heat, stirring occasionally, until most of the liquid has evaporated and apples are very soft, about 1 1/2 hours.
  • Discard the cinnamon stick. Pass apple mixture through a coarse-mesh sieve or food mill, pressing with a rubber spatula or the back of a spoon. Discard peel, cloves, and any remaining seeds.
  • Preheat oven to 350°F. Transfer apple mixture to a 13- x- 9-inch baking pan. Stir in lemon juice and bake 1 to 1 1/2 hours or until reduced, very thick, and a dark amber color.
  • Remove pan from oven and stir in apple cider vinegar; let cool in pan.

Notes

Store apple butter in an airtight container in the refrigerator up to 14 days or freeze up to 3 months.
