Ingredients

  • 3/4 tsp gelatin powder
  • 1 Tbsp water
  • 6 oz bittersweet chocolate, finely chopped
  • 1 1/2 cups heavy cream
  • 3 Tbsp granulated sugar
  • Whipped cream optional
  • Raspberries optional
  • Chocolate curls optional, See note
  • Fresh mint optional

Instructions

  • Sprinkle gelatin over water in a small bowl and let stand 5 minutes. Place chocolate in a medium bowl and set aside.
  • Add 1/2 cup cream and sugar to a small saucepan set over medium heat. Bring to a simmer, and cook, 2 minutes or until sugar granules dissolve.
  • Remove from heat, add gelatin mixture, and stir until fully dissolved. Pour cream mixture over chocolate and whisk until chocolate is melted and smooth.
  • Cool mixture to room temperature, stirring occasionally as it cools (this should only take about 5 to 10 minutes).
  • Beat remaining cream to medium-stiff peaks. Whisk 1/3 of cream into chocolate mixture. Use a rubber spatula to fold in remaining whipped cream until fully incorporated.
  • Pour mousse into dishes, cover with plastic wrap, and chill until ready to serve.

Notes

If you hold a small section of a chocolate bar firmly in your hand for about 30 seconds, then run a vegetable peeler along the edge, you'll create beautiful chocolate curls.
