Funfetti Sugar Cookies

I think everyone can remember that classic funfetti boxed cake that we all seemed to make for every occasion… I think it may have been everyone’s very first baking adventure at some point in their lives. At least that was my experience with it! I absolutely loved making anything funfetti growing up.. I mean, sprinkles make literally everything better, right!?

This recipe is a classic sugar cookie dough made in 1 bowl. Nothing says simple and easy to me like a 1-bowl recipe lol.

What are Funfetti Sugar Cookies

For this recipe I’m taking a classic soft, chewy sugar cookie recipe and packing it full of sprinkles. One of my favorite things to do with any recipe is add loooots of sprinkles lol – it just makes everything more fun 🙂

This sugar cookie recipe is truly one of my favorites – and the recipe as a whole was birthed out of my happening to find a sugar cookie ice cream sandwich at work in the freezer. For those of you who don’t know, I work full-time for a company called eMeals. I’m a recipe developer, dietitian, and writer there which means I get to spend a lot of time in the kitchen.

Anyways, my coworker developed these ice cream sandwiches a long time ago and I guess I asked her to save me one in the freezer. I forgot about it, then discovered it weeks later (a very happy surprise after a long day in the test kitchen). She developed the original recipe with sugar cookie dough that you purchase at the grocery store, but I wanted to see if I could mimic that with a recipe made from scratch, so here it is!

Equipment you may need

  • Measuring cups/spoons: I’ve been linking these in all of my posts because I love them SO much! They are beautiful and look just like some other expensive ones on the market (but wayyy cheaper).
  • Stand mixer: you can make this recipe in just a regular bowl with a wooden spoon and a whisk, but stand mixers truly make life so much simpler. Especially since this is a one-bowl recipe, might as well be the bowl of your stand mixer! I love mine from KitchenAid – I pray that it never breaks down on me because I use it almost everyday lol.
  • Cookie scoop: such a great thing to have on hand – especially if you want uniform cookies. I highly recommend you use this to scoop out your dough. This set has 3 different sizes – so you can have a small cookie or a huge one (let’s hear it for all the gigantic cookie lovers out there)!!
  • Food scale: if you want to be extra sure your cookies are all uniform in size, use a food scale to measure the weight of your balls. It might be an extra step but there’s just something about a batch of cookies that are all the same size!

Tips for making these cookies

  1. Use room temperature ingredients. If any of your ingredients are too cold your butter will split and you mixture will be curdled! I always set my ingredients (like butter and eggs, things that are safe to sit out) on the counter the night before I bake something that I know I’ll need room temperature ingredients for. This way I have everything ready to go.
  2. Roll the dough in the sprinkles. You may have to squeeze the sprinkles onto the dough balls in between your hands. You want them to adhere to the surface of the cookie, so this is sometimes the best way to accomplish that. I wouldn’t mix the sprinkles into the dough because the sprinkles may run, and we want to see the colorful sprinkles on the cookies.

Funfetti Sugar Cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter at room temperature
  • 1 1/4 cups granulated sugar
  • 1 large egg at room temperature
  • 1 Tbsp pure vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 1/2 cups all-purpose flour
  • Rainbow sprinkles

Instructions

  • Beat butter and sugar in the bowl of a stand mixer fitted with the paddle attachment on high speed 2 to 3 minutes or until light and fluffy.
  • Beat in egg and vanilla until combined. Beat in baking soda, baking powder, and salt until combined.
  • With the mixer running on low speed, gradually beat in flour until just combined.
  • Cover bowl with plastic wrap and chill at least 30 minutes or up to 3 days.
  • Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Add sprinkles to a small shallow bowl.
  • Scoop dough into Tbsp-sized balls and roll dough between hands to create balls. Roll dough balls in sprinkles and place 2 inches apart on prepared baking sheets.
  • Bake 10 to 12 minutes or until cookies are no longer glossy on tops; do not let them brown around the edges - they will be overbaked!
